The University of Barcelona hosted today the presentation of Bullipedia project and UB-Bullipedia Unit. The chef and honorary doctorate from the UB Ferran Adrià has described them to journalists and cooking schools representatives. In the event, the rector of the University of Barcelona, Dídac Ramírez, explained that “UB participation in this innovative project is the management of UB-Bullipedia Unit, which will give academic counselling and create synergies among university experts on different fields of knowledge and the team of El Bulli Foundation, as well as the appointment of its academic coordinator”.

The University of Barcelona hosted today the presentation of Bullipedia project and UB-Bullipedia Unit. The chef and honorary doctorate from the UB Ferran Adrià has described them to journalists and cooking schools representatives. In the event, the rector of the University of Barcelona, Dídac Ramírez, explained that “UB participation in this innovative project is the management of UB-Bullipedia Unit, which will give academic counselling and create synergies among university experts on different fields of knowledge and the team of El Bulli Foundation, as well as the appointment of its academic coordinator”.

 
Bullipedia is one of the main objectives of El Bulli Foundation, an initiative fostered by Ferra Adrià which aims at providing society in general, and gastronomy world, with high quality information about the knowledge generated by El Bulli.

During his presentation, Adrià remarked that “Bullipedia is a unique project all over the world which will enable to disseminate all the knowledge generated by El Bulli Foundation, but also to create new one”. According to the prestigious chef, by means of this resource, professional cooks and the teaching staff of degrees and courses related to cooking and gastronomy will be able to include new technologies in their daily life.

 

UB-Bullipedia Unit

Within this project, the University of Barcelona hosts the academic unit UB-Bullipedia, to support and counsel Bullipedia project. This unit, located on the first floor of la Masía Building at the Food and Nutrition campus of the UB, in Santa Coloma de Gramenet, was created as a result of the agreement signed by the rector of the UB and Ferran Adrià as a representative of El Bulli Foundation on 23rd October 2012.

Abel Mariné, professor emeritus from the Department of Nutrition and Bromatology at the Faculty of Pharmacy of the UB, was appointed by the rector as academic coordinator of UB-Bullipedia. About UB-Bullipedia, Mariné highlighted that “UB researchers on topics related to nutrition and food Technology collaborate in the unit that coordinates also the participation of those worldwide centres and universities which want to be involved in the project”. Currently, experts from other centres and students of the degrees in Human Nutrition and Dietetics, Food and Science Technology and Chemistry are already collaborating in the project.

UB-Bullipedia Unit designated Pere Castells to coordinate and be the link with El Bulli Foundation. The academic side of Bullipedia will be developed in several connected fields: history of West culinary art by means of recovering historical documents; science and cooking, in which scientific knowledge will be applied to cooking in order to develop new ideas and projects; the analysis of cooking techniques studied at universities and cooking schools to structure information; the study of cooking products; cooking terminology; creativity and cooking (application of the creative process which links art and cooking), and companies organisation and management.

In order to plan and organise tasks, several structures or sub-units of UB-Bullipedia have been created. In this sense, an agreement with the University School of Hotel Management and Tourism (CETT) was signed today to create the UB-Bullipedia.CETT Unit. CETT is an international centre for education and knowledge transfer in hotel and tourism management, affiliated with the UB. It will coordinate the participation in the project of worldwide official education centres focused on cooking, gastronomy, hotel and restaurants, especially in cooking techniques applied to products.

UB-Bullipedia Unit will play a major role in the definition and validation of the creative archive of products, which will start by elaborating a rigorous scientific classification of food products in order to facilitate its application to cooking professionals and education.
