Amb una producci\u00f3 mundial de prop de 590.000 tones per any, els preus varien molt segons l\u2019origen, i el frau perjudica sobretot productes locals amb una denominaci\u00f3 o indicaci\u00f3 geogr\u00e0fica protegida (DOP i IGP). Encara no hi ha cap metodologia anal\u00edtica oficial per autenticar l\u2019origen de les avellanes i els controls oficials \u2014basats en la tra\u00e7abilitat documental\u2014 s\u00f3n insuficients per prevenir el frau.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ara unes recerques dutes a terme en el marc del projecte TRACENUTS, finan\u00e7at pel Ministeri de Ci\u00e8ncia, Innovaci\u00f3 i Universitats (PID2020-117701RB100) i liderat per la professora Stefania Vichi, de la Facultat de Farm\u00e0cia i Ci\u00e8ncies de l\u02bcAlimentaci\u00f3 i l\u2019Institut de Recerca en Nutrici\u00f3 i Seguretat Aliment\u00e0ria (INSA) de la Universitat de Barcelona (UB), revelen noves metodologies per garantir la proced\u00e8ncia de l\u2019avellana i, aix\u00ed, evitar el frau comercial i els problemes de seguretat aliment\u00e0ria derivats de la falta de tra\u00e7abilitat de l\u2019aliment. En un treball publicat a la revista Food Chemistry, es presenten els resultats prometedors d\u2019una metodologia basada en l\u2019\u00fas de m\u00faltiples marcadors isot\u00f2pics.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aquest estudi \u00e9s pioner en l\u2019aplicaci\u00f3 de l\u2019an\u00e0lisi isot\u00f2pica \u2014una de les eines m\u00e9s reconegudes per verificar l\u2019origen geogr\u00e0fic d\u2019aliments\u2014 per autenticar la proced\u00e8ncia geogr\u00e0fica de les avellanes. En un estudi anterior (Food Chemistry, 2024) en el marc del mateix projecte, l\u2019equip tamb\u00e9 havia desenvolupat m\u00e8todes \u00f2mics basats en l\u2019avaluaci\u00f3 de perfils metab\u00f2lics per autenticar, amb una elevada efici\u00e8ncia, tant l\u2019origen com la varietat de les avellanes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Signen aquesta recerca equips multidisciplinaris de la Facultat de Farm\u00e0cia i Ci\u00e8ncies de l\u02bcAlimentaci\u00f3, el Campus de l\u2019Alimentaci\u00f3 de Torribera, l\u02bcINSA, la Facultat de Ci\u00e8ncies de la Terra, l\u2019Institut de Recerca de l\u2019Aigua (IdRA) de la UB, i l\u2019Institut de Recerca i Tecnologia Aliment\u00e0ries (IRTA).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Marcadors isot\u00f2pics per determinar l\u2019origen geogr\u00e0fic de l\u2019avellana<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La composici\u00f3 isot\u00f2pica dels aliments est\u00e0 fortament influenciada per factors geogr\u00e0fics com la geologia del terreny, la hidrologia i les pr\u00e0ctiques agr\u00edcoles aplicades sobre el s\u00f2l de cultiu. Tanmateix, analitzar un sol marcador isot\u00f2pic pot resultar insuficient per autenticar l\u2019origen geogr\u00e0fic d\u2019un producte agroalimentari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00abLa principal dificultat en l\u2019autenticaci\u00f3 geogr\u00e0fica \u00e9s la complexitat dels sistemes agroalimentaris i dels factors que poden influir en la composici\u00f3 de l\u2019aliment, a m\u00e9s dels factors ambientals. L\u2019avantatge de certs marcadors isot\u00f2pics, a difer\u00e8ncia d\u2019altres metodologies, \u00e9s que poden relacionar-se directament amb factors ambientals i geol\u00f2gics, sense veure\u2019s influ\u00efts per altres factors com la varietat o les condicions d\u2019emmagatzematge\u00bb, comenta la professora M\u00f2nica Rosell, del grup de recerca TECNIO MAiMA &#8211; Is\u00f2tops estables i Mineralogia, de la Facultat de Ci\u00e8ncies de la Terra de la UB i l\u2019IdRA.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A banda de l\u2019alta resoluci\u00f3, una de les altres fites de l\u2019enfocament multiisot\u00f2pic que presenta l\u2019estudi \u00e9s la gran capacitat per explorar el potencial de diversos marcadors isot\u00f2pics \u2014i identificar-ne els m\u00e9s prometedors\u2014 per autenticar l\u2019origen geogr\u00e0fic de les avellanes. \u00abAix\u00f2 permet obtenir informaci\u00f3 complement\u00e0ria, i identificar els marcadors isot\u00f2pics m\u00e9s adequats per autenticar l\u2019origen de les avellanes, que podran ser aplicats i testats en sets amplis de mostres per maximitzar l\u2019efici\u00e8ncia de l\u2019an\u00e0lisi. El nou m\u00e8tode descarta els marcadors que no ajuden a una millor distinci\u00f3, de manera que estalvia costos innecessaris a llarg termini i millora els resultats de predicci\u00f3 i l\u2019efic\u00e0cia del m\u00e8tode d\u2019autenticaci\u00f3\u00bb,\u00bb, explica la investigadora predoctoral Berta Torres, primera autora de l\u2019estudi i membre de la Facultat de Farm\u00e0cia i Ci\u00e8ncies de l\u02bcAlimentaci\u00f3 i l\u2019INSA.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aquesta metodologia senzilla i amb un m\u00ednim tractament de mostra, seria f\u00e0cilment transferible i aplicable a laboratoris de control i de rutina. Aix\u00ed doncs, podria avaluar-se com una eina de suport als organismes de control que facilitaria un nombre m\u00e9s alt de controls mitjan\u00e7ant un m\u00e8tode anal\u00edtic robust i fiable.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Perfils metab\u00f2lics per determinar l\u2019origen i la varietat del producte<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">En el marc del mateix projecte, l\u2019equip tamb\u00e9 ha desenvolupat m\u00e8todes basats en marcadors metab\u00f2lics de l\u2019avellana. En aquest cas (Food Chemistry, 2024), l\u2019estudi es basa en un conjunt de metab\u00f2lits lip\u00eddics secundaris de les avellanes continguts en l\u2019anomenada fracci\u00f3 insaponificable. \u00abAmb una \u00fanica an\u00e0lisi, la t\u00e8cnica permet autenticar tant l\u2019origen com la varietat de les mostres. Fins al moment no hi ha cap estudi que proposi una metodologia per autenticar ambd\u00f3s factors en una sola an\u00e0lisi. Aquesta metodologia s\u2019ha desenvolupat en un escenari desafiant en qu\u00e8 s\u2019aconsegueix discriminar tant l\u2019origen entre mostres de la mateixa varietat bot\u00e0nica com la varietat entre mostres del mateix origen\u00bb, subratlla la professora Alba Tres, de la Facultat de Farm\u00e0cia i Ci\u00e8ncies de l\u02bcAlimentaci\u00f3 i l\u2019INSA.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En l\u2019estudi, es van utilitzar m\u00e9s de 170 mostres de tres or\u00edgens diferents, que comprenen dos anys de collita i diverses cultivars. Les conclusions revelen que el model \u00e9s capa\u00e7 de donar una resposta eficient, tot i la variabilitat natural que presenta el producte. \u00abAix\u00f2 posiciona la nostra estrat\u00e8gia anal\u00edtica com una opci\u00f3 adequada per verificar mostres dubtoses i com a suport de les eines de cribratge r\u00e0pid\u00bb, conclou la professora Vichi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les dues metodologies descrites en aquestes publicacions cient\u00edfiques s\u00f3n compatibles i complement\u00e0ries, i podrien utilitzar-se conjuntament per millorar la identificaci\u00f3 de les mostres. D\u2019una banda, l\u2019enfocament multiisot\u00f2pic avaluat en aquest estudi \u00e9s un m\u00e8tode f\u00e0cilment transferible, ja que est\u00e0 basat en l\u2019an\u00e0lisi d\u2019uns marcadors isot\u00f2pics concrets i estandarditzats internacionalment, i es podria aplicar de manera reprodu\u00efble en controls i an\u00e0lisis de rutina en altres laboratoris. Alhora, la t\u00e8cnica del marcatge (fingerprinting) de la fracci\u00f3 insaponificable t\u00e9 m\u00e9s efici\u00e8ncia de classificaci\u00f3, i resultaria un m\u00e8tode adequat per verificar aquelles mostres desafiants o dubtoses i com a suport de les eines de cribratge r\u00e0pid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En aquesta l\u00ednia de recerca, i en el marc del projecte TRACENUTS, l\u2019equip impulsar\u00e0 noves l\u00ednies de treball sobre les metodologies presentades en aquests dos articles, per aplicar-les a sets de mostres m\u00e9s amplis i amb m\u00e9s variabilitat natural, aix\u00ed com a avellanes que pertanyen a DOP espec\u00edfiques. A m\u00e9s, s\u2019est\u00e0 avaluant l\u2019estabilitat dels marcadors en l\u2019autenticaci\u00f3 d\u2019avellanes processades, fet que permetr\u00e0 determinar la idone\u00eftat d\u2019aquests m\u00e8todes per a l\u2019autenticaci\u00f3 no nom\u00e9s d\u2019avellanes crues, sin\u00f3 per a una \u00e0mplia gamma de productes derivats.
