L&#8217;objectiu era passar d&#8217;una ciutat industrial a un model de desenvolupament urb\u00e0 basat en el turisme. Els tres mil anys d&#8217;hist\u00f2ria de la ciutat havien de ser el pilar sobre el qual es constru\u00eds el futur. El objetivo era pasar de una ciudad industrial a un modelo de desarrollo urbano basado en el turismo. Los tres mil a\u00f1os de historia de la ciudad deb\u00edan ser el pilar sobre el que se construyera el futuro. The goal was to shift from an industrial city to an urban development model based on tourism. The city&#8217;s three thousand years of history were to be the pillar on which the future could be built. Em vaig introduir en un equip de cuiners que volien apropiar-se de la seva disciplina, explicar-la a la seva manera i generar coneixement sobre ella que els fos \u00fatil en la pr\u00e0ctica de la professi\u00f3. Em van contractar com l&#8217;especialista en Hist\u00f2ria i Arqueologia que podia ajudar-los a elaborar una hist\u00f2ria de la restauraci\u00f3 gastron\u00f2mica seguint els seus criteris i prioritats. Aix\u00ed va comen\u00e7ar un projecte en el qual Gastronomia i Hist\u00f2ria es donaven la m\u00e0 per primera vegada. Durant el proc\u00e9s, tant ells com jo vam haver d&#8217;adaptar el nostre m\u00e8tode de treball per a portar la col\u00b7laboraci\u00f3 a bon port. El resultat &#8211; el m\u00e9s evident \u00e9s el llibre <em>Els Or\u00edgens de la Cuina<\/em> &#8211; no \u00e9s ni un producte purament hist\u00f2ric, ni purament gastron\u00f2mic; \u00e9s un h\u00edbrid. Me introduje en un equipo de cocineros que quer\u00edan apropiarse de su disciplina, contarla a su manera y generar un conocimiento sobre ella que les fuera \u00fatil en la pr\u00e1ctica de la profesi\u00f3n. Me contrataron como la especialista en Historia y Arqueolog\u00eda que pod\u00eda ayudarles a elaborar una historia de la restauraci\u00f3n gastron\u00f3mica siguiendo sus criterios y prioridades. As\u00ed comenz\u00f3 un proyecto en el que Gastronom\u00eda e Historia se daban la mano por primera vez. En el proceso, tanto ellos como yo tuvimos que adaptar nuestro m\u00e9todo de trabajo para llevar la colaboraci\u00f3n a buen puerto. El resultado &#8211; el m\u00e1s evidente es el libro <em>Los Or\u00edgenes de la Cocina<\/em> &#8211; no es ni un producto puramente hist\u00f3rico, ni puramente gastron\u00f3mico, es un h\u00edbrido. I was introduced to a team of chefs who wanted to appropriate their discipline and generate knowledge about it that would be useful in the practice of the profession. They hired me as the specialist in History and Archaeology who could help them develop a history of gastronomic restoration following their criteria and priorities. Thus began a project in which Gastronomy and History were shaking hands for the first time. In the process, both they and I had to adapt our working method to bring the collaboration to fruition. The result &#8211; the most obvious is the book <em>The Origins of Cooking<\/em> &#8211; is neither a purely historical product, nor a purely gastronomic one, it is a hybrid. This was an interactive exchange of questions with the authors of GAPP\u2019s latest book \u201c21 Essays on Cultural Heritage\u201d (published by JAS Archaeology).\u00a0<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00bb4.8.1&#8243; _module_preset=\u00bbdefault\u00bb]<\/p>\n<p>The debate was led by the book\u2019s editors, Ana Pastor, Mathieu Picas and Apen Ruiz, and was attended by almost all of the book\u2019s contributors. The \u201cManagement and Dissemination of Rock Art in the Mediterranean\u201d dialogue was led by Neemias Santos da Rosa and as speakers it counted with the participation of Salvador Lude\u00f1a (Casa de Cristo Rock Art Interpretation Center, Moratalla) and Agust\u00ed Vericat (Abrics de l\u2019Ermita Rock Art Center). This new format will allow us to invite two experts to talk about a common topic through a series of questions addressed by the organizers. We would like this to be an open dialogue, as our \u201cconverses\u201d (talks) tend to be, with interruptions and exchanges with the public.<\/p>\n<p>[\/et_pb_text][et_pb_text _builder_version=\u00bb4.9.1&#8243; _module_preset=\u00bbdefault\u00bb]<\/p>\n<p>For this first dialogue, we have two guest experts in Cave Art: Salvador Lude\u00f1a (Director of the Casa de Cristo Cave Art Center, Moratalla, Murcia) and Agust\u00ed Vericat (Director of the Abrigos de la Ermita Cave Art Center, Ulldecona, Catalonia) . They talken about the Management and Dissemination of Rock Art in the Mediterranean Environment.
