The physical properties of fats is significant for not only basic sciences but also the industrial crystallization area. In this presentation, at first, I will introduce the microbeam X-ray diffraction by using synchrotron radiation facility (SR-micro-XRD), secondly, two typical results using by SR-micro-XRD are shown; (i) the spherulite structures of fats, (ii) the heterogeneous crystallization on the oil-water interface of oil droplets in oil-in-water (O/W) emulsion. In more detail, (i) the spherulite structures of fats; the microstructure of spherulite of trilaurine (200 x 200 micrometer) has been investigated by scanning the microbeam (5 x 5 micro-meter sized X-ray beam, wave length: 0.11 nm) step by step for each 20 micro-meter. The small angle diffraction peaks correspond to the lamellar structure of trilaurine. The main results show that there is a random orientation of lamellar structures in a center, however, all local points except for the center show the lamel
