In this course, we explore food through a systems perspective, working toward a comprehensive and operational understanding of what constitutes a sustainable food system. We examine each stage of the food chain-production, harvest, processing, distribution, storage, transport, marketing, consumption, and waste-through local experiential learning activities and Mediterranean case studies. These approaches help us analyze how food systems are shaped by social, political, economic, and environmental forces.
